Recipe - Texas Caviar

I got this recipe from a friend when she brought some to a party. It's so addictive, if you serve it, you'll have everyone asking for the recipe, so make sure you print out some recipes to give away. I think this is one of the best and healthiest party dips around, and will be a real hit with your vegetarian and natural foods friends, when served with all natural corn chips or tortilla chips. It's even good all by itself, or on crackers. Enjoy!


Dressing:
1/4 cup sugar
1/2 cup salad oil
1/2 cup white vinegar

1 cup red onion, finely chopped
1 cup medium green pepper, finely chopped (mix colored peppers for more color)
1 can black-eyed peas
1 can black beans
1 can white corn
2-3 dashes salt (optional)
2-3 dashes pepper (optional)
1 bag Fritos corn chips, 'scoops'


Rinse the canned items. (VERY IMPORTANT!)
Chop the veggies.
Mix everything together and let marinate in the refrigerator 2 or more hours. (Overnight is best.) Stir occasionally to keep well coated with dressing. DO NOT pour off dressing , because it needs to stay in there to keep it moist.
Serve on Fritos' Scoops'. (or other chip.)
